Gnocchi Soup
A little bit of prep plus one pot creates this creamy Gnocchi Soup. We can't think of a more comforting winter weeknight meal!

Ingredients

2 tablespoons olive oil 

1 medium yellow onion, diced  

4 carrots, diced 

3 celery stalks, chopped 

2-3 garlic cloves, minced 

2 teaspoons fresh thyme leaves 

½ teaspoon kosher salt, plus more as needed 

Few cracks of pepper, plus more as needed 

Pinch of red chili flakes 

1 tablespoon vegan butter  

4 tablespoons all purpose flour 

6 cups vegetable stock 

1 ¼ cup Califia Farms Extra Creamy Oat Beverage, plus more as needed  

1 pound vegan potato gnocchi 

¼ cup sun dried tomatoes, chopped 

2-3 handfuls spinach, roughly chopped

Heat the olive oil in a large pot set over medium heat. Add the onions and cook until translucent. Add the carrots, celery, garlic, thyme, ½ teaspoon of salt, pepper, and chili flakes. Cook everything for an additional 4-5 minutes

Add the butter and flour. Mix everything together until the butter has melted and the vegetables are well coated with flour, about 1 minute

Slowly add the vegetable stock while stirring constantly. Once all the stock has been added, adjust the heat and let simmer for about 15 minutes, or until the carrots and celery are tender

Add the Extra Creamy Oat Beverage, gnocchi, chopped sun dried tomatoes, and spinach, and mix to combine. Let the gnocchi simmer for about 5 minutes or so, or until cooked through. Taste, and add additional salt or pepper as needed. If a thinner texture is preferred, add an additional ½ cup of oat milk or stock as needed
