Cook Time: 30 minutes
Servings: 4
Ingredients

For the cauliflower bites:
1 cup Califia Farms Extra Creamy Oat Beverage
1 head of cauliflower, chopped into florets
2 cups breadcrumbs
1/2 cup flour
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon smoked paprika
Pinch of red pepper flakes

For the gochujang sauce:
1/2 cup brown sugar
2 tablespoons rice vinegar
2 tablespoons soy sauce
2 tablespoons gochujang
1/4 cup vegetable stock

Directions
01
For the cauliflower bites: Preheat your oven to 450 degrees Fahrenheit and line your baking sheet with parchment paper
02
In a medium bowl, add the Califia Farms Extra Creamy Oat Beverage, flour, salt, black pepper, smoked paprika, and red pepper flakes, and whisk together until fully combined and mostly smooth
03
Set aside
04
Add bread crumbs to a separate bowl and set aside
05
Dip each cauliflower floret into the batter (shaking off any excess) and then toss into the bread crumbs
06
Lay each cauliflower side by side on the baking sheet (about an inch apart)
07
Repeat until all cauliflower florets are coated
08
Bake for 30-35 minutes or until golden brown
09
For extra crispiness, put your oven on the "broil" setting and bake for another 5-10 minutes
10
For the gochujang sauce: Place all ingredients in a medium saucepan over medium-high heat and whisk together until it begins to boil
11
Reduce heat to medium-low and let it simmer for about 15 minutes or so, stirring occasionally
12
Once thickened enough to your desired consistency, remove from heat and let cool
13
Once cauliflower florets are crisp, remove them from oven and toss them in the sauce until fully coated
14
To serve, add to a salad, tacos, pizza, with quinoa or rice, or by themselves with vegan ranch dipping sauce
15
Enjoy!
