Strawberry Hand Pies
These Strawberry Hand Pies are our ideal dessert — all the flavor of a full pie, but in bite-size form.

Ingredients
For the crust:
1 cupCalifia Farms Extra Creamy Almond Beverage
2 ½ cups all-purpose flour
2tablespoons cane sugar
Pinch of salt
3/4 cup vegan butter, cut into pieces
1tablespoon apple cider vinegar
1tablespoon Califia Farms Extra Creamy Almond Beverage + 1 teaspoon agave, for brushing
For the filling:
1 cup strawberry preserves or jam
For the glaze:
3 to 4 tablespoons Califia Farms Extra Creamy Almond Beverage
2 ½ cups powdered sugar
1 tablespoon strawberrypreserves or jam
Directions

For the crust:
In a measuring cup, add theCalifia Farms Extra Creamy Almond Beverage and apple cider vinegar and set aside

In a large bowl, add the all-purpose flour, salt, and sugar, whisking together until combined

Add the vegan butter and using a pastry blender, blend butter into dry Ingredients until the mixture becomes pea-like and crumbly

Pour in the apple cider vinegar/almond milk mixture and stir (working it together with one hand) until the dry Ingredients are moistened

Shape the dough into a ball, wrap in plastic wrap, flatten it slightly, and chill for at least 1 hour

For the filling:
In a small bowl, add 1 cup of strawberry preserves and stir until preserves or jam becomes light and easy to stir

Set aside

For the glaze:
In a medium bowl, whisk together powdered sugar, strawberry preserves or jam, and almond milk until smooth

To make it thicker, add additional powdered sugar, 1 tablespoon at a time

To make it thinner, add additional almond milk, 1tablespoon at a time

To assemble:
Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper

Once chilled, remove the dough from the refrigerator and place on a lightly floured surface, rolling it out into a large rectangle (about 3 mm thick)

Cut into small rectangles (3″ wide and 4″ long), until all dough is used

On all pieces of dough, lightly brush almond milk/agave mixture to ensure that they seal

On half the pieces of dough, add 1 tablespoon of the filling and carefully cover it with a "plain" rectangular piece, gently pressing the edges down

Using a fork, carefully crimp the edges and place on the baking sheet

Repeat until all hand pies are created

Once all hand pies are on the baking sheet, gently prick a set of holes on the tops using a fork

Lightly brush all hand pie tops with the remaining almond milk/agave mixture and bake in the oven for 20-25 minutes, until golden brown and the filling begins to bubble

Remove from the oven and let them cool for 10 minutes

Once hand pies have cooled completely, spoon 1 to 2tablespoons of finished glaze on top of each pie

Let pies sit for another 1-2 minutes so that the frosting hardens
