Blueberry Doughnut Holes
Breakfast never looked so good. These one-bite Blueberry Doughnut Holes may or may not be our main motivation for getting out of bed most days.

Ingredients

For the doughnuts:
1 cup Califia Farms Extra Creamy Oat Beverage
1 cup flour 
1/2 cups oats 
2 teaspoons baking powder 
1/4 teaspoon baking soda 
1/4 teaspoon salt 
1/2 cup cane sugar 
1 tablespoon apple cider vinegar 
3 tablespoons coconut oil 
1 teaspoon vanilla extract 
1 cup blueberries 

For the blueberry glaze: 
1-2 tablespoons Califia Farms Extra Creamy Oat Beverage
2 cups powdered sugar, sifted 
1 tablespoon blueberry preserves 
Vegan sprinkles (for topping)

Directions

For the doughnuts: Begin by preheating your oven to 350 degrees Fahrenheit and lightly greasing a 20-cavity doughnut hole pan

In a separate bowl, add the Califia Farms Extra Creamy Oat Beverage and apple cider vinegar, whisking together well and letting it sit for 2-3 minutes

Then add in the coconut oil, sugar, vanilla, and whisk everything together

In a separate bowl, whisk together the flour, oats, baking powder, baking soda, and salt

Stir the dry ingredients into the wet ingredients until just well combined and batter is thick and smooth, about 2-3 minutes

Fold in the blueberries

Spoon the batter into the prepared doughnut hole pan

Be sure to only fill each cavity about 3/4 full

This ensures that the doughnut holes are perfectly shaped and not too large

Bake for 10-13 minutes or until a toothpick inserted into the doughnut centers comes out clean

Remove from oven and allow them to cool for 5-10 minutes before releasing the doughnuts from their pan and onto a cooling rack to cool completely

For the blueberry glaze: Whisk together the powdered sugar, blueberry preserves, and Califia Farms Extra Creamy Oat Beverage until smooth and consistency is met

For a thicker glaze, add additional powdered sugar (1 tablespoon at a time)

For a desired thinner glaze, add additional oat milk (1 tablespoon at a time)

Once fully cooled, dip each doughnut hole into the prepared glaze and set them back onto cooling rack so that the glaze hardens a bit

Top with festive sprinkles and repeat until all donut holes are glazed and sprinkled
