Cashew Queso
This Cashew Queso is the perfect accompaniment to watching sports, binging the latest TV show, or just eating solo.

Ingredients

8 ounces soaked cashews, raw and unsalted

1/4 cup nutritional yeast 

2 teaspoons hot chili paste, Calabrian chili pepper paste, chipotle in adobo, or jalapeño 

2 garlic cloves 

2 teaspoons white vinegar 

1/2 cup Califia Farms Extra Creamy Oat Beverage

Salt and pepper to taste 

Tortilla chips, cilantro, and sliced jalapeño, for serving

If possible, soak cashews overnight in water. If pressed for time, pour hot water over them prior to starting this recipe and let soak, about 5-10 minutes until cooled

In a food processor, blend soaked cashews, nutritional yeast, hot peppers of choice (or omit), garlic cloves, vinegar and Califia Farms Extra Creamy Oat Beverage. Blend until smooth, thick, and creamy

Serve in a bowl and top with cilantro and sliced jalapeño. Serve with tortilla chips and enjoy!
