Loaded Veggie Orzo
This Loaded Veggie Orzo is generously creamy and bursting with savoury flavors. Keep it simple with the cooked vegetables or add additional toppings for extra crunch and flavor.

Ingredients

4 cups Califia Farms Extra Creamy Almond Beverage
3 cups vegetable stock 
1 cup orzo 
1 teaspoon each: salt, black pepper, garlic powder, onion powder, dried oregano 
1 cup kale, chopped  
2 cups frozen vegetables (green beans, carrots, corn) 

Directions

In a medium saucepan or pot over medium-high heat, add in the orzo, almond milk, and vegetable stock, stirring until combined

Bring to a boil and let boil 2-3 minutes before reducing heat to low and letting it simmer for an additional 15-20 minutes

At the 10-minute mark, add in the frozen vegetables, chopped kale, salt, black pepper, garlic powder, onion powder, and dried oregano, stirring to combine

Let continue to cook

Once the orzo is soft and has absorbed almost all of the liquid, remove from heat and serve immediately
